The Restaurant Business Top 100 ranking of the nation’s largest independent restaurants returns after a pandemic-induced hiatus in 2021.
Unsurprisingly, this absence resulted in a higher than usual number of newcomers to the latest ranking. And that includes a debut album that’s particularly high on the list. Here are the top 100 newcomers of this year.
The Miami Beach hotspot generated $27.4 million in sales in 2021. The restaurant serves a combination of Mediterranean and Asian cuisine and has a rooftop bar.
Maple and ash (#12)
The historic Chicago restaurant outpost of Scottsdale, Ariz., saw sales of $23.5 million last year.
Papi Steak (No. 18)
Another Miami Beach hotspot made $22 million last year. He is known for his $1,000 steak presented to customers in a rhinestone-studded briefcase.
Pastis (No. 30)
This resurrected restaurant in New York is in a new location and offers bistro fare. It made $19.7 million in sales last year.
Old Mill Restaurant (No. 48)
Pigeon Forge Restaurant in Tennessee is a high-volume venue that generated $16.7 million serving Southern classics in a 200-year-old flour mill.
Bar Siena (n°74)
This Chicago restaurant made $13.75 million with a menu of Italian street food and pizza.
The Hampton Social (#75)
This Nashville restaurant generated $13.4 million in sales last year, offering seafood and beach-themed cocktails.
Bistro 31 (No. 86)
This European-style cafe in Dallas serves up French, Italian and Spanish flavors and had sales of $12.3 million last year.
The Spot (#92)
This beachfront restaurant in Galveston, TX offers stunning views of the Gulf as well as burgers and wings. It made $11.7 million in sales last year.
Steak 954 (No. 93)
The beachfront restaurant offers premium steaks at the W Hotel in Fort Lauderdale. Last year, sales were $11.5 million.
El Vez Philadelphia (#95)
El Vez is a trendy Mexican restaurant serving upscale cocktails and cuisine. It made $11.5 million in sales last year.
Toulouse Café & Bar Houston (n°98)
Toulouse is a stylish sidewalk cafe that serves French classics and Houston cocktails. He made $11.1 million last year.
